My family and I have been enjoying our patio quite a bit lately, and with Summer around the corner, I have been experimenting with easy ice-creams. Having received Woody Lodge Winery‘s “Concord” wine, I sought out to make a wine ice-cream with it. It turns out that Woody Lodge Winery also makes ice-creams, so we’ll have to compare recipes! LOL!
My recipe is ridiculously easy because it doesn’t require a custard base, and you don’t even need an ice-cream maker! Of course, you can use it, if you have it (I used mine), but it honestly works totally fine without it.
This wine is the perfect one to use for this ice-cream because it has the most beautiful color and perfect sweet taste. Don’t get me wrong; it is delicious by itself, but it’s wonderful in ice-cream too! By the way, this is a grown-up ice-cream, but you could totally make it kid-friendly with Concord juice, rather than wine.
To accompany the ice-cream, I also made a wine-chocolate sauce that works for many other things, but tasted delicious with the ice-cream. As the title of this post states, I am calling this ice-cream an “ice-cream fool” because it is made the same way you would make a fool.
In case you don’t know, a fool is an old-fashioned dessert made by adding a fruit puree to whipped cream. For this ice-cream, instead of a puree, I used the wine with some sugar to concentrate the flavor. Because it is made like a fool, you could potentially also served it not frozen, to accompany a poundcake, for example, so it is a very versatile recipe too.
Since Easter is around the corner, I decorated the table with moss bunnies for a Spring theme. I think an ice-cream social would serve as the fabulous ending to an Easter celebration. To style my ice-cream station, I enjoyed arranging a variety of toppings, sauces, and a few concord grapes. Everything was simple, but super delicious. Concord Wine Ice Cream Fool
Ingredients for the Chocolate Syrup
- 1 cup concord wine
- 1/4 cup of white sugar
- 2 cups of heavy cream
Instructions
- In a medium bowl, dissolve the sugar into the wine.
- Begin to whisk the cream, and pour the wine while you whisk. Keep whisking until the whipped cream reaches consistency; about 2-3 minutes. Don’t over-whisk!
- Pour the mixture into a freezer-safe container. Freeze for 3-4 hours or overnight. Alternatively, pour into ice-cream maker until it reaches a soft-serve consistency before freezing.
- Scoop and enjoy!
Ingredients for the Concord Wine Chocolate Sauce
- 1 cup Missouri concord wine
- ½ cup chocolate chips
Instructions
- Add the chocolate chips and melt until smooth. Let cool slightly and serve.
- If you want the sauce to be runnier, just add more wine or water to thin it to your taste.
